I'm a crock pot lovin', cassarole cookin' homeschool mamma...
That is the way it is around here!
I LOVE to cook, but with the schedules we keep, it gets crazy. I find that when I cook dinner in the morning, the afternoons go much better.

I will hopefully be posting some of my faves over here and I hope that THOUSANDS will join me! I'm always looking for a new healthy recipes....heaven knows I have enough books!!

This is one of those tried and true recipes that I found YEARS ago...
If you like Wendy's chili, this tastes JUST LIKE THE REAL THING!!

2 lbs. ground beef (I use organic 93% lean)
29 ounce can tomato sauce
29 oz. can kidney beans (with liquid)
1 C diced onion
1/2 C diced green chili (can works fine)
1/4 stalk celery
3 med. tomatoes, chopped (I used diced in a can and drain them, if the tomatoes aren't good)
2 t cumin powder
3 T chili powder
1 1/2 t black pepper
2 t salt
2 C water

Brown ground beef in skillet, drain off fat.
***DID YOU KNOW if you rinse the meat you bring the fat to 5 grams after rinsing....****
JUST REMEMBER TO RESEASON

Using a fork, crumble beef into pea size pieces
In a large pot add beef and all other ingredients and simmer over low for 2 ~3 hours!

makes about 12 servings...
good for lunch the next day!!
